Creamy White Truffle Mashed Potatoes

Creamy White Truffle Mashed Potatoes

30 - 40 minutes, Serves 4 to 6

These mashed potatoes are very comforting and go well with braised lamb or beef. Now that we have preserved potatoes, we can prepare them many different ways from roasted to mashed for months to come.

Ingredients

2 lbs Gold and/or White Potatoes, washed, unpeeled, and cut into 2-inch chunks
12 cups Water
1 Tbsp Kosher Salt, plus more to taste
1 stick Cold Butter, cut into cubes, plus more to taste and finish
2 cups Heavy Cream, warmed and slightly reduced
1 Tbsp Sour Cream
¼ tsp White Truffle Oil (optional)

Instructions

Step 1 Place potatoes and water into a medium pot and bring to boil over high heat. Reduce heat to medium and simmer until tender. Drain, shake off excess water, and allow to air dry for two minutes.
Step 2 Transfer potatoes to stand mixing bowl with paddle attachment or use hand mixer with beaters. Add partial salt and half of butter. Mix on slow to medium and continue process of adding butter and salt to taste.
Step 3 Once satisfied with salt and butter taste, slowly add reduced heavy cream until desired creaminess is obtained. Add sour cream.
Step 4 Add ¼ teaspoon white truffle oil and finish mixing on high.
Step 5 Serve hot and top with butter.
