Chocolate Cremeux with Maple Meringue

The farm is beginning to ramp back up for spring and that means so are the chickens. As the weather gradually warms up, chickens begin to lay more eggs, which means the staff at Bellwether Farm have plenty of eggs to find a use for. While most commonly eaten as part of a hearty, nutritious breakfast, eggs are one of the most versatile kitchen staples. From a simple fried egg to whipped and baked cloudlike bites, the egg is always delicious and provides protein, carbohydrates, salt, and a myriad other nutrients to keep you fueled properly. But what can be done when you’re exhausted from a hard day’s work and crave a taste of something sweet? Eggs have you covered here too. The rich, savory yolk helps make a delicious custard and the airy whites fluff up for a tasty meringue topping. It is called a cremeux, and it has become a favorite dessert amongst staff and guests alike out here at Bellwether. We hope to see you out at the farm soon so we can serve you some cremeux, send you home with some eggs, and inspire you to whip up your own delicious chocolate cremeux.

Ingredients

Cremeux Ingredients:
1 1/2 cups heavy cream

1 1/2 cups

whole milk

5

large egg yolks

1/2 cup

sugar

2 teaspoons

kosher salt

9 oz

dark chocolate, chopped finely

Maple Meringue Ingredients:

1/4 cup

maple syrup

1/4 cup

light corn syrup

3 tablespoons

water

1/8 teaspoon

cream of tartar

1 pinch

salt

2

egg whites

Instructions

Cremeux Directions:
1.

Heat your cream and milk in a saucepan until it simmers.

2.

Turn off the flame and let it sit.

3.

Meanwhile, whisk egg yolks with salt and sugar in an bowl.

4.

Gradually pour in some of the creamy milk mixture while stirring constantly to prevent curdling.

5.

Return this mixture to the saucepan and stir on low heat for about 5 minutes or until it thickens. (Be careful not to curdle.)

6.

Using a fine sieve, strain the mixture into a glass or heat-proof bowl.

7.

Stir in chopped chocolate and let sit for 2 minutes or until it melts.

8.

Whisk well until the mixture is smooth and creamy.

9.

Pour it into a shallow ceramic dish or individual glasses and cover with a plastic sheet.

10.

Refrigerate for at least 6 hours or overnight.

11.

Top with maple meringue (see recipe).

12.

Garnish as desired and enjoy!

Maple Meringue Directions:

1.

In a small saucepan, combine maple syrup, corn syrup, water, cream of tartar, and salt. Cook over medium heat, stirring constantly, until mixture comes to a boil.
Remove from heat.

2.

In a medium mixing bowl, beat egg whites until foamy. With mixer on medium speed, slowly pour the hot syrup mixture over the egg whites. Turn mixer to high speed and beat until stiff peaks form. Spoon or pipe the meringue onto the cremeux, brown with torch or as quick as possible under a high broiler. Place back into the refrigerator for 5 minutes to chill.
